Mouthwatering Pumpkin Bread



















Found the best recipe ever for pumpkin bread through Pinterest here. I made several loaves and took them with me to work. They were gone within minutes and my co-workers kept coming up to me asking me how on earth I created such an amazingly delicious creation!

:: Ingredients ::
1 1/4 C oil
5 eggs
2 C pumpkin
2 C flour
2 C sugar
2 pkg cook & serve vanilla pudding (sm boxes)
1t salt
1t baking soda
1t cinnamon

:: Crumb Topping ::
1/2 C flour
1/4 C sugar
1/4 t cinnamon
pinch of salt
3 T butter

:: Pumpkin Bread ::
1. Preheat oven to 325 degrees 
2. Grease & flour 3 loaf pans
3. Blend oil, eggs & pumpkin
5. Combine other ingredients & add pumpking to mixture
6. Combine dry ingredients for crumb topping
7. Cut butter into dry mixture with pastry blender until it resembles coarse crumbs
8. Sprinkle & lightly pat on crumb topping
9. Bake for 1 hour
10. Lightly dust with powdered sugar after bread has cooled

Country Ventures

One of my favorite things to do is go exploring. Yesterday was a beautiful day outside and I had the day off! I decided to go somewhere new to go hiking. I went to Warner Park which was not too far of a drive from my house. It was a gorgeous day out and the temperature was perfect!

After my hike, I stopped by the double arch bridge along the Natchez Trace Parkway. I had been over this famous Tennessee icon before when I was much younger. It was a very neat bridge. I continued on my journey to Leiper's Fork.

Once I got to Leiper's I walked around and went in a couple of the little shops. I ended my day at Puckett's. The one in Leiper's is the original Puckett's. The other ones are in Nashville and Franklin. Puckett's is an iconic restaurant with country-style fixings. I ordered a cookies and cream ice cream cone. It hit the spot on the warm sunny day!

Happy Easter!

Had a wonderful Easter weekend with family and friends. My parents were able to come down to visit for the weekend. We walked around The Factory and also downtown Franklin. We ate lunch at Saffire in The Factory. I ordered the Pressed Cuban Pork Sandwich with yam fries [sweet potato fries]. It was delicious. We spent the evening at my aunt and uncle's watching March Madness and devouring chips and guacamole.

On Easter Sunday I had to be to church early to sub for Sunday school. I got placed in the nursery with the babies! I got to hold a little girl named Emily. She was the best. Didn't cry once! Went to church with my parents and roommate. Ate brunch at Sperry's in Cool Springs. Ordered eggs benedict. It was so good! Had a very nice Easter weekend! I hope yours was lovely!
